**INGREDIENTS**


For the Rough Puff Pastry (Makes approx. 350g)
- 125 g Butter, Cold and Cubed
- 125 g Plain Flour
- 60 ml Cold Water

For the Filling:
- 5 Medium Red Onions (about 3 large), Sliced
- 2 tablespoons Butter
- 2 tablespoons Olive Oil
- Salt and Pepper
- 2 teaspoons Dried Italian Herbs
- 2 Cloves Garlic, Minced
- 30 g Parmesan or similar hard cheese, Grated
- 150 g Mature (Strong) Cheddar, Grated
- 1 Medium Egg (Optional - for egg wash)

**INSTRUCTIONS**


1. Start by making the pastry, if making your own. Combine the flour and butter in a large bowl, rubbing together with fingertips until roughly combined. Leave some visible bits of butter. Add water and form into a ball. Wrap and chill for 30 mins.

2. For the caramelized onions, cook sliced onions with butter, oil, and salt over medium heat. Keep adding liquid to prevent burning. Stir in garlic and herbs when onions turn deep caramelized. Season to taste.

3. Roll out pastry into a long rectangle. Fold top edge down, then fold bottom edge over to form a square with 3 layers. Repeat and chill for 20 minutes.

4. Preheat oven to 250°C/220°C Fan/Gas 7. Line two large baking trays.

5. Roll pastry flat and cut into 4 equal squares. Place two squares on each tray. Add equal amounts of onion filling to the middle of each square and spread diagonally.

6. Sprinkle mixed grated cheeses, reserving some for topping. Wrap pastry by folding corners into the middle and pressing together. Expose filling.

7. Optionally brush with beaten egg and sprinkle remaining cheese. Bake for 12-15 minutes until golden brown. Cool on wire rack before serving. Enjoy warm!
